Whitney is a Jasper Hill Creamery original, inspired by the classic, mid-elevation mountain cheeses of Europe. At Jasper Hill, people are the main ingredient; this stoic, reliable cheese pays homage to Jasper Hill’s longest-standing employee: the steadfast Tim Whitney.
This raw milk cheese is made from grass-fed cows. During cheesemaking, lactose-rich whey is rinsed from the curds in the vat, which slows acidification and creates a smooth, semi-firm, meltable texture. While wheels ripen in The Cellars, they are washed with a mixture of morge—a naturally cultured brine—and spent yeast from the tanks of La Garagista, a terroir-driven natural winery in Vermont. This treatment brings a floral funk to the rich but mellow paste.
A long, lingering experience on the palate is Whitney’s greatest strength. The tasting notes range from light floral and fruit tones with savory, toasted nut and baked cheese flavors. The rind is a presentable rosy orange-pink. The paste of the cheese develops small eyes through affinage and a pliable, giving texture.
With a cheese as infinitely snackable as Whitney, you’ll have no problem finding creative pairings for this cheese. We recommend pairing with a cold-climate unfiltered white wine with bracing acidity like La Garagista’s Ci Confonde or a Grüner Veltliner. Gherkins are a promising accoutrement and sweet, musty cured meats like Bresaola are surefire hits.
