Pasture raised sheep and cow milk infused with maple and finished with vegetable black ash over a bloomy rind.  Dense and lovely. A perfect melding of the flavors of the Adirondacks. It’s a sheep and cow milk blend infused with cream and a maple reduction and aged just a touch longer in our aging cave than most of our bloomy rinds and then enveloped in a black ash. This cheese accents the best of the Boreal Forest of the Adirondack Mountains. A very unique cheese that has medaled at the U.S. Cheese Championships twice, the World Cheese Championships, and the ACS Contest.
