Pecorino Riserva is made in Rocalbegna, a small village dating from medieval times. The town is located in the high valley of Albegna, in the province of Grosseto, which in turn is located in the region of Tuscany.

The sheep’s milk that is used to make this cheese is drawn from flocks who graze closeby in the Maremma hills and on the slopes of Amiata Mountain.  These high remote pastures are pristine, with an abundance of thick and varied vegetation, and are little changed over the centuries.

The cheese is aged for about 15 months in cool damp undergound cellars where the product is brought to its pinnacle.

The hallmarks of good Pecorino Toscano are: a nutty flavor not often found in other Pecorinos, the rich sweetness that comes from the fantastic Tuscan sheep’s milk, and a deep long lasting flavor.  Pecorino Riserva has all of these in spades.
