Essex Street Cheese works with a very limited set of producers, and tries to find cheeses to bring to the market that are unlike any other. And in order to do so, that means they generally only come out with a new cheese every five years. So now the wait is over, and they are releasing a new Dutch sheep’s milk gouda from famed affineur l’Amuse.
Rispens is a sheep’s milk gouda named for the Rispens family, who are farmers and cheesemakers in the Netherlands.
We at Zuercher tasted the cheese recently and it was well reviewed. The comparisons ran the gamut – pecorino, parm, ossau iraty, Spanish sheep’s milk, and so on. And that is what we like best about the Essex/l’Amuse Dutch cheese lineup. They are all uniquely Dutch, but so different than the rather homogenous mix of Dutch cheeses you find in the US.
