Brie d’Irène is produced in partnership with Isigny Sainte-Mère in Normandy, France. Normandy is considered France’s dairy heartland, known for its lush, green pastures. Its clay-rich soil, salty marine air from the English Channel, and damp temperate climate creates the desired terroir upon which the Normande cattle graze. Additionally, Normande milk has an exceptionally high protein and butterfat content, desirable characteristics for cheesemaking, it is also guaranteed free of antibiotics. The texture and flavor of Brie d’Irène changes over time. When young, the flavor is mild and the texture is semisoft. The texture evolves, ripening from its bloomy coat, to the heart of the cheese, retaining its buttery flavor. Later, a fuller flavor develops, hinting at fresh button mushrooms. Brie d’Irène pays homage to the beloved Irene Zuercher, a woman respected for her values of hard work, determination, and self-sacrifice in leading the family business into the current generation.
