Cooking with Le Gruyère AOP

French Onion Soup
with Le Gruyère AOP

Ingredients (4 servings)
800 g yellow onions, thinly sliced
80 g butter
1 tbsp olive oil
3 garlic cloves, minced
1 tbsp flour
200 ml white wine
1.5 litres beef broth
1 tsp thyme
Salt and pepper
8 slices baguette
300 g Le Gruyère AOP, freshly grated

Instructions
1. Heat butter and oil, then caramelise the onions for 20 minutes.
2. Add garlic, sauté briefly, stir in flour.
3. Deglaze with white wine, reduce slightly, then add broth.
4. Add thyme and simmer for 20 minutes. Season well with salt and pepper.
5. Toast baguette slices, top with plenty of Le Gruyère AOP, and melt them in the oven.
6. Serve the soup with the cheesy toasts on top.

 

Mac and Cheese with Le Gruyère AOP

Ingredients (4 servings)
• 500 g short pasta (macaroni etc.)
• 40 g butter
• 40 g flour
• 600 ml milk
• 300 g Le Gruyère AOP, grated
• 1 tsp mustard
• Salt, pepper, nutmeg
• Breadcrumbs (optional)
•A bit of butter for topping

Instructions
1. Cook pasta al dente.
2. Melt butter, whisk in flour, cook 1 minute. Pour in milk slowly while whisking.
3. Stir in cheese, mustard, salt and pepper. The sauce should be thick and silky.
4. Combine pasta with the sauce and transfer to a buttered baking dish.
5. Optional crunchy moment: top with breadcrumbs and a few butter flakes.
6. Bake at 200 °C for about 20 minutes until bubbling and golden.

 

Juicy Burger with Le Gruyère AOP

Ingredients (4 servings)
• 4 burger buns (brioche or classic)
• 600–700 g ground beef (20 percent fat)
• Salt and pepper
• 1 tbsp Worcestershire sauce (optional)
• 1 onion, sliced into rings
• Butter or oil for frying
• 150–200 g Le Gruyère AOP, sliced
• Lettuce, tomato, mayo, mustard – whatever you vibe with

Instructions
1. Mix ground beef with salt, pepper and Worcestershire sauce. Shape 4 patties – don’t press them too tightly.
2. Sear patties, then cook 3–4 minutes per side.
3. Add Le Gruyère AOP on top shortly before the patties are done, cover the pan and let it melt.
4. Fry onion rings in butter until golden.
5. Toast buns, assemble your burger, stack everything high – you’re done.
