Willoughby is Back!

Originally produced at Ploughgate Creamery in Vermont, Willoughby has taken up permanent seasonal residence at the Cellars of Jasper Hill. Zuercher & Co. is happy
to announce that the season in now upon us, and Willoughby is available to
pre-order for April 9th arrival.

This washed
rind cheese, when young (5 weeks or so), has a rosy rind, sliceable texture and
milky, yeasty aromas with stone fruit and herbal flavors. As Willoughby ages
(8-9 weeks), its texture becomes progressively gooey and funky, displaying a
more meaty, garlic/onion assertiveness.

Willoughby’s
small 8-ounce format makes it a desirable size for retail artisan cheese
counters and restaurants.  After tasting with a refreshingly spicy
farmhouse ale or Grenache-based rosé, you may want order more before it
disappears again.
